Shrimp Skewers with Orange Rum Sauce

Ingredients for shrimp marinade:

  • 2 lbs large shrimp peeled, deveined, tails removed

  • Juice from 2 oranges

  • Juice of 1 lime

  • 6 cloves of minced garlic

  • 1 Tbsp minced fresh ginger

  • salt and pepper (to taste)

 

Ingredients for Glaze:

  • Juice from 2 oranges

  • Juice from 1 lime

  • 1/4 cup rum (not spiced or flavored)

  • 4 to 6 cloves minced garlic

  • 1 Tbsp minced fresh ginger

  • 1/2 tsp red pepper flakes

  • 3 Tbsp soy sauce

  • 2 Tbsp Agave Syrup

  • 2 Tbsp cornstarch

  • 2 Tbsp water

 

Technique:

Prepare marinade for the shrimp by combining all ingredients in large bowl.  Wisk together and add the shrimp.  Cover and refrigerate 2-4 hours.

While shrimp is marinating, prepare glaze by combining cornstarch and water in small bowl and set aside.  Combine remaining ingredients in small saucepan and cook until liquid is reduced by 1/4.  Add cornstarch mixture to saucepan and stir until thickened.  

Add Shrimp to skewers (3-4 per skewer depending on the size of your shrimp) and prepare grill.  Once grill is up to temperature (medium high heat) cook shrimp skewers about 3 minutes per side (cooking time will vary depending on shrimp size) until done but not tough.

Serve with sauce on side or brushed on just prior to serving.
